The Best Amaranth Pancake Recipe

There’s something undeniably comforting about pancakes, and when Pancake Day rolls around, there’s no better time to elevate the tradition with a sophisticated twist. This year, we took our pancakes to the next level with an Amaranth Pancake recipe, cooked to golden perfection on a well seasoned carbon steel frying pan, and served with a fragrant cardamom orange syrup, a dollop of creamy Greek yogurt, and a generous sprinkling of pistachios.

Ingredients


Pancakes:

Amaranth flour: 120g
Tapioca starch (or potato starch): 30g
Baking powder: 2 Tsp
Fine sea salt: 1/4 Tsp
Maple syrup (optional): 1 Tbs
Eggs : 2
Milk: 120ml
Sparkling water: 120ml
Vanilla extract: 1 Tsp


Orange and Cardamom Syrup:

Orange juice: 120ml (about 2 oranges)
Granulated sugar or honey: 30g
Cardamom podsL: 4–5 pods
Orange zest (grated from 1 orange): 1 Tbsp
Butter (optional, for richness): 5g, cold


Toppings:

Fresh orange segments
Toasted pistachios or almonds
Greek yogurt or coconut cream


Method


Make the Syrup

In a pestle and mortar, lightly crush the cardamom pods to release their aroma.


Combine the orange juice, sugar, cardamom pods, and orange zest in a small saucepan. Bring to a gentle boil, stirring to dissolve the sugar.


Reduce the heat and simmer for 8–10 minutes, or until the syrup thickens slightly.


Stir in the butter (if using) for a glossy finish. Remove from heat and set aside to cool slightly.


Prepare the Pancake Batter

In a large bowl, whisk together the amaranth flour, tapioca starch, baking powder, and salt. Pass it through a sieve.


In a separate bowl, whisk the eggs (or flax eggs), milk, sparkling water, vanilla extract, and honey. Gradually pour the wet ingredients into the dry ingredients, whisking gently until just combined.


Let the batter rest for at least 20 minutes.


Cook the Pancakes

Heat up carbon steel pan over medium-low heat. Lightly grease with butter.


Pour 3-5 tablespoons of batter onto the pan for each pancake.


Cook until bubbles form on the surface and the edges appear set. Flip carefully and cook for another 3 minutes until golden brown. Transfer to a plate and keep warm. Repeat with the remaining batter.


Prepare Orange Segments

Cut off the top and bottom of the orange. Peel the skin and remove the white membrane following the curve. Cut through the membrane to form clean, juicy pieces.


Assemble and Serve

Stack the pancakes on a serving plate. Drizzle generously with the warm orange and cardamom syrup.


Top with fresh orange segments, toasted pistachios, and a dollop of yogurt or coconut cream.
