Winter Brunch Idea - Green Shashuka

When morning gets a bit chilly, there’s nothing quite like gathering around the table your family for a warm, comforting brunch. Winter calls for hearty flavours, vibrant ingredients, and dishes that bring a sense of cosiness. This green shakshuka is packed with winter greens, earthy spices, and topped with soft-baked eggs, this dish is perfect for a seasonal brunch spread.


Shakshuka, a classic North African and Middle Eastern dish, is traditionally made with a rich tomato and pepper base. This winter-inspired version switches things up, featuring seasonal cavolo nero and leeks for a heartier twist. Paired with warming spices like cumin and a touch of fiery harissa. Serve it with crusty sourdough.

Ingredients


Onion: 1, finely diced

Cavolo nero: 300g, roughly chopped

Leek: 1

Cumin: 2 tsp

Coriander: bunch

Egg: 3

Feta cheese: 150g

Harissa: 1 tbs

Extra virgin olive oil: 2 tbs

Salt and pepper: to taste



Method


Preheat the oven to 180°C (fan), 200°C (oven), or gas mark 6.



Use a sharp knife to dice the onion and roughly slice the leek.



Remove the stems from the cavolo nero and roughly chop them.



Add oil to a shallow casserole dish and heat over medium heat.



Add the diced onion and sweat for 10 minutes, stirring occasionally, until soft and translucent.



Stir in the cumin and fry until fragrant.



Add the sliced leek and cavolo nero, then sauté until softened.



Roughly chop the coriander and stir it into the vegetables.



Mix in the harissa and season with salt to taste.



Make small wells in the vegetable mixture and crack one egg into each hole.



Sprinkle feta cheese over the top.



Bake in a preheated oven at 180°C (or 350°F) for 8 minutes, or until the eggs are cooked to your liking.
