Whether you're cutting back on alcohol or just want a delicious and refreshing drink to sip in the sun, this mocktail is the answer. It’s naturally sweetened with honey, packed with real fruit, and super easy to make at home with simple ingredients. It’s a light and vibrant non-alcoholic drink that’s perfect for hot days, garden parties, and family-friendly gatherings.

Number of servings: 4

Preparation time: 30 mins

Ingredients

Strawberry Purée (makes 4 mocktails):

Strawberries: 320g

Honey: 1/4 cup (80ml)

Mocktail (serves 1):

Strawberry purée: 100g

Yuzu juice: 30ml (or substitute with 20ml grapefruit juice + 10ml lemon juice)

Basil leaves: 5g

Sparkling water: to top up (around 70ml)

Ice cubes: as needed

Garnish:

Fresh Strawberries

Sprigs of basil

Method

Start by making the strawberry purée. Smash 320g of strawberries in a bowl with 80ml of honey until the mixture is mostly smooth with small chunks remaining. This purée is enough to make 4 glasses of mocktail.

If using yuzu juice, measure out 30ml and add into cocktail shaker. If substituting, squeeze in 20ml of grapefruit juice and 10ml of lemon juice into cocktail shaker.

Add 100g of the prepared strawberry purée. Tear in the basil leaves (about 5g).

Add ice cubes to fill up the cocktail shaker. Close the lid, hold the top and bottom firmly, and shake well until the shaker feels icy cold.

Prepare a frozen glass. Add a sprig of basil and fill it with ice cubes. Pour in sparkling water halfway (around 70ml). Top with the shaken mocktail mixture. Serve immediately. Garnish with a fresh strawberry.
