Ingredients
Rolled puff pastry: 2
Egg: 1
Icing Sugar: 20g (for dusting)
Spiced apples:
Apple: 3
Cinnamon: 2 tbs
Ground ginger: 1 tsp
Ground nutmeg: 1 tsp
Brown sugar: 20g
Butter: 20g
Baileys custard cream:
Baileys irish cream: 50ml
Full fat milk: 200ml
Single cream: 150ml
Granulated Sugar: 70g
Egg yolk: 3
Vanilla extract
Butter: 15g
Plain flour: 20g
Method
To make Baileys custard, add milk, cream, and vanilla extract into a saucepan. Infuse on low heat for 10 minutes, but do not bring it to a boil.
In a mixing bowl, whisk eggs, sugar, and flour until fully incorporated. Do not overmix.
Gradually add the warm milk with a ladle, whisking continuously as you pour. Mix until the egg and milk are fully incorporated, ensuring it does not curdle.
Pour the egg and milk mixture back into the saucepan. Cook on medium-low heat, stirring continuously until it thickens.
Add Baileys Irish Cream and remove from heat. Immediately add cold butter and whisk until incorporated.
Pass custard through a sieve into a bowl over an ice bath to cool it down. Cover the surface with clingfilm to prevent a skin from forming.
To make spiced apples, peel and core the apples, then chop them into small cubes.
In a saucepan, add the apples, spices, sugar, and butter. Cook on medium-low heat for 15 minutes until the apples are soft. Let them cool.
Preheat the oven to 180°C (fan) / 200°C (conventional) / Gas Mark 6 .
Roll out the puff pastry, use a Christmas cookie cutter to cut out shapes, then egg wash and bake in a preheated oven for 15 minutes until golden.
Let the puff pastries cool completely on a cooling rack before assembling.
To assemble, place one puff pastry on the bottom, spread custard, and add spiced apples on top. Place another puff pastry on top to form a sandwich.
Dust with icing sugar. Enjoy!
