Season Cast Iron Shallow Casserole Toasted Oat

£80.00 Regular price
Size26cm (2.3L)

A wide, shallow casserole that goes from hob to oven to table: brown chicken thighs and finish them in the oven, bake focaccia, cook a chilli or a shallow braise, make a Sunday fry-up. More surface than a deep casserole, so more browns at once and sauces reduce faster.

Rather than copy a traditional design, our cooks and chefs started from a blank sheet. The walls and lid are the same thickness, so heat moves evenly through the pan. The lid is slightly domed so air can circulate, and the small dimples on its underside catch rising moisture and baste whatever is beneath. Generous handles make it easy to lift, even in oven gloves.

Toasted Oat is pale enough to read as neutral, warm enough not to read as clinical.

Three questions people ask

Shallow or deep? Shallow for browning, roasting, baking and quick braises; deep for stews, stock and bread. More in shallow or deep casserole?.

Which size? 26cm holds 2.3 litres, 30cm holds 3.5 litres. If you cook for four or more, or want room to brown everything in one layer, take the 30cm.

Will the enamel chip? Enamel chips if it is dropped or hit with metal. Use wooden or silicone tools and it will not.

Jam Delish

Head Chef Nathan uses the Season Shallow Casserole to prepare vibrant vegetables for his Caribbean black-eyed pea stew.

As reported in

‘There’s an appetite for cast-iron cookware at a more affordable price… Season is a group of cooks and chefs, cookshops and cookery schools that has its own range of cast ironware. The sides and lids of its casseroles are the same thickness, which it says will ensure even cooking. Lids are domed to enable bread to rise, and have small dimples to collect moisture and baste whatever is cooking.’
