How to cook on stainless steel without sticking

Stainless steel has a reputation for sticking. It doesn't deserve it. The pan is rarely the problem — the timing usually is. Get the heat right and stainless steel will release an egg as cleanly as any coated pan, with no coating to flake, scratch or wear out.

This guide uses a fried egg as the worked example, because it's the hardest test a pan faces. If you can fry an egg on stainless steel, fish and vegetables will follow.

Preheat the pan

Food sticks to stainless steel when it goes in before the pan is ready. At the wrong temperature, proteins bond to the bare metal and hold on.

Set the pan over low to medium heat and leave it for two to three minutes. The Season tri-ply frying pan has an aluminium core between layers of stainless steel, so heat spreads quickly and evenly across the base — but it still needs those few minutes. Don't rush this part. Everything else depends on it.

Do the water test

Flick a few drops of water into the pan.

If they sit and bubble, it isn't hot enough yet.

If they vanish instantly, it's too hot. Lift it off the heat for a minute.

If they form beads that skate across the surface, the pan is ready.

The skating beads are the Leidenfrost effect: the pan is hot enough to turn the underside of each droplet to steam, so the droplet rides on its own vapour. It's your most reliable visual cue.

Wipe the water out before adding oil. Water in hot oil spits.

Add oil

Oil is the barrier between the egg and the metal, and it carries heat evenly into the food.

Use one with a high smoke point: vegetable, sunflower, avocado, or ghee. Extra virgin olive oil and butter on their own burn at these temperatures, and the flavour turns bitter with them.

One to two teaspoons, swirled to coat the whole base. If the oil only pools in the centre, anything at the edges will stick.

Add the egg and lower the heat

When the oil is hot but not smoking, add the egg. Crack it into a small bowl first if you want to keep shell out and the yolk whole.

Then turn the heat down to low. The pan has already stored the heat it needs; keeping the flame low stops the white bubbling violently, the edges catching, and the texture turning rubbery. Tilt the pan so the egg settles where the oil pools, then level it again. Season it now if you like.

Wait, then release

After 30 to 60 seconds, once the white has started to set, slide a turner under the edge and work gently towards the middle. A silicone turner is kind to the pan; a metal fish slice gives more precision.

If the egg resists, it isn't ready. Give it another 30 seconds. Food releases from stainless steel when it's cooked enough to let go — that's the pan telling you the timing, not fighting you.

Cleaning up

Done properly, this leaves almost nothing behind. A wipe with kitchen paper or a rinse in warm water usually does it. For light browning, simmer a little water and baking soda in the pan for a few minutes, then go over it with a sponge. Anything more stubborn: read the deep cleaning guide.

Where it goes wrong

Skipping the preheat

Cold or unevenly heated steel is exactly what food bonds to.

Overheating

If the pan is smoking before the food goes in, the oil has burnt and the flavour goes with it.

Too little oil

There's no coating to fall back on. The oil is the coating.

Moving food too early

Food tells you it's ready by letting go. If it's clinging, it needs another minute.
