Why it's made this way
The Damascus layers are folded steel, there for strength; the pattern is what folding leaves behind. The core is 10Cr15CoMoV, hard enough to take a keen edge and keep it. The blade runs through to the end of the handle, so the weight sits where you want it, and three rivets keep the rosewood true.
Keep it sharp
Hone it once a week and it will stay sharp for about three months of home cooking. Then a few minutes on the whetstone brings it back; the guide holds the angle for you. Cut on wood, never glass or stone. Watch how it's done
