The knife
The S1 is the traditional knife in our range, and the only one we make in Japanese VG-10 steel, a steel produced by a single mill in Fukui, and prized enough that China developed an equivalent to the same specification. That equivalent is what our S3 and S4 use: same spec, same performance. What the S1 has is the original steel, a classic profile, and a raindrop Damascus finish.
It isn't full tang, and it's light for its size. The straighter edge is the point: where a chef's knife rocks through a cut, a santoku chops - up and down, fast and flat - which is how most of us actually cut most things. If your board work is mainly vegetables, this is the shape that earns the spot.

A gyoza filling lives or dies on the knife work - kimchi and spring onions chopped fine, ginger and garlic minced finer. The santoku's flat edge is built for exactly this.
