The knife
The S1 is the traditional knife in our range, and the only one we make in Japanese VG-10, a steel produced by a single mill in Fukui, and prized enough that China developed an equivalent to the same specification. That equivalent is what our S3 and S4 use: same spec, same performance. What the S1 has is the original steel, a classic profile, and a raindrop Damascus finish.
It isn't full tang, and at 149g for the 20cm it's a light knife. Most cooks, in our experience, prefer the heft of the S4. Some pick both up and prefer this one, lighter in the hand, quicker to move, traditional from blade to handle. There's no right answer. There's the one that feels right when you hold it.
