What size chopping board do I need?

The short answer: the largest board that fits your worktop with room to spare. For most home kitchens that is around 40 x 30cm. Go bigger, to 43 x 33cm or 46 x 36cm, if you cook for four or more, batch cook or carve roasts. Nobody ever complained that their board was too big to chop on.

Why bigger is usually better

A small board fills up fast. You chop an onion, push it to one side, start on the carrots, and the onion is soon on the worktop. A larger board gives you somewhere to pile what you have prepared, room to rock a 21cm chef's knife without hitting the edge, and space for a whole chicken or a loaf. A heavier board also stays put while you work.

Start with your worktop

  1. Measure the depth. A standard UK worktop is about 60cm deep. Allow for the splashback and anything that lives at the back, such as a kettle or a jar of utensils.

  2. Leave a margin. You want about 10cm of clear worktop in front of the board, so you are not leaning over the edge. On a 60cm worktop with a clear back, a board 30-36cm deep sits comfortably.

  3. Measure the run. Find the longest clear stretch you normally prepare on. Leave about 15cm either side of the board for a bowl or a plate.

  4. Think about storage and washing. A board that lives out on the worktop can be large. If it goes in a cupboard, measure the shelf. You do not need to fit it in the sink: wooden boards should be washed and wiped, never left to soak.

What is a good all-round chopping board size? About 40 x 30cm. It handles everyday cooking for a family and fits most worktops.

Is a 46 x 36cm board too big for a home kitchen? Not if your worktop is about 60cm deep and you have a clear run. It is the size to have if you carve or cook for a crowd.

How thick should a chopping board be? For an end grain board, 2.5-3cm gives stability and weight. Thinner boards are lighter but more likely to move and warp.
