The handle is not only shaped from equally easy on the eye ebony Pakkawood, but its D-shape fits perfectly in the palm of your right hand.
The qualities of the Kai Shun Santoku are greater than skin deep however; the VG10 steel blade holds its razor sharp edge for a remarkably long time. The DM-0718 knife has a great weight to it, so you feel confident tackling a wide range of kitchen tasks, and it's sharpness and comfort make it a real joy to use. This is right at the top end of no compromise design.
