The ultra-sharp Kai Shun Classic 15cm Utility Knife makes a great all-rounder for times when something more delicate than a chef's knife or Santoku is required. The exceptionally hard V-gold-10 steel blade that stays sharp for an incredibly long time, with 32 layers of Damascus steel folded round the blade core, giving it its distinctive looks.
