This Yorkshire pudding recipe uses simple ingredients like eggs, semi-skimmed milk, plain flour, vegetable oil or beef dripping to create light, airy, crispy Yorkshire puddings that pair beautifully with roast beef, turkey and hot gravy. If you're planning to make them for your upcoming Christmas dinner, this recipe is for you – it's completely fool-proof simply following the 1:1:1 ratio rule, ensuring consistent results every time. Equal parts eggs, milk and flour create the ideal batter for tall, crisp, golden Yorkshire puddings that never fail on the Christmas table.

Ingredients 

3 eggs

Semi-skimmed milk (same weight as the eggs)

Plain flour (same weight as the eggs)

Pinch of salt

½–1 tsp English mustard (optional) – enhances flavour

Vegetable oil or beef dripping (1 tbsp per muffin hole)


Method


Crack the eggs into a bowl or jug and weigh them. This weight will determine the amount of milk and flour needed. Whisk the eggs until smooth.


Add the same weight of semi-skimmed milk and whisk again.


Add the same weight of plain flour along with a pinch of salt and the optional English mustard.


Whisk until everything is fully incorporated. For a quicker, lump-free batter, use a hand blender.


Transfer the batter to the fridge and let it rest for at least 4 hours; overnight resting gives the best texture and rise.


Preheat the oven to 200°C fan / 220°C conventional.


Add 1 tablespoon of vegetable oil or beef dripping into each muffin tin hole.


Place the muffin tin into a hot oven and preheat it for at least 20 minutes, allowing the oil or dripping to become piping hot.


Remove the batter from the fridge just before using it. Give it a quick whisk with the Season Soft Grip Whisk to recombine.


Carefully pour the batter into the piping-hot tin, filling each muffin hole to about 40%. Avoid overfilling.


Immediately return the tin to the oven and bake for at least 18 minutes. Do not open the oven door during this time.


For a crispier base, quickly flip each Yorkshire pudding after the initial bake and return them to the oven for an additional 2 minutes.


Serve straight away with hot gravy as part of your Christmas dinner.
